Large ratio is the best way to go for extremely hilly rides. I weigh 200lbs and was keeping up to all the more experienced fitter lighter riders in a group that were running 11-25 and 11-28. My cadence did drop to 56 at the worst climb. Some of the others were down in the high 30s on the worst hill. Albeit, I worked harder on the flats, because I did find that optimum cadence was harder to find at times. I spin at 90-95 rpm most of the time.
If you're sponsored or otherwise on an unlimited budget, go for Dura-Ace. For everyone else running Shimano or SRAM, this is the 11 speed cassette of choice. It's durable, it's light, and it's reasonably priced. What more do you need? Keep your chain clean and fresh, and it'll last for many thousands of kilometers.
